Asparagus & Cheese Potato Soup

Description

A treasure of spring--tender asparagus--coupled with red potatoes is featured in this soup.

Ingredients

8Slicebacon cut in 1 inch pieces
1LargeOnion, chopped
4Teaspooncooking oil
3TablespoonFlour
3Cup1-inch pieces asparagus spears
2CupMilk
1 14 1/2 oz. can chicken broth
2CupRed potatoes, cubed
1⁄2Teaspoonsalt
1⁄8Teaspoonground red pepper
1CupShredded sharp Cheddar cheese
1Smalltomato, seeded & chopped
1Cupsour cream

Instructions

In a fry pan cook bacon until crisp. Drain grease from bacon and set aside. In a large saucepan cook onion in hot oil over medium heat until tender. Add bacon and sprinkle flour over onion and bacon and stir to coat. Add the asparagus, milk, chicken broth, potatoes, salt and red pepper. 

Cook and stir until thickened and bubbly; reduce heat. Simmer, covered, for 15 minutes or just until vegetables are tender, stirring occasionally. Add cheddar cheese, tomato, and sour cream; stir until cheese is melted.
