America’s favorite vegetable is truly a comfort food favorite as fries. To retain all the healthy goodness of potatoes’ nutritious profile, bake wedges in the oven with vegetable oil and Italian herb seasoning. Serve with a fresh salsa for healthy dipping.

1TablespoonCanola or other vegetable oil
1TeaspoonDried Italian herb seasoning

Bake 20 to 25 minutes until potatoes are golden brown, turning once after 15 minutes. Serve immediately, with optional salsa for dipping.
