Chicken Parmesan with Roasted Veggies

Ingredients

1MediumChicken Breast
2CloveGarlic (pressed or chopped)
2TablespoonParmesan cheese
3Tablespoon (Metric)Olive oil
3CupVeggies (of your choosing)
1CupAlsum red potatoes

Instructions

Toss chopped veggies with 2 tablespoons olive oil and salt & pepper to tatse. Place in a baking pan. Mix garlic cloves, parmesan cheese, and one tablespoon of olive oil. Press onto chicken breast. Place chicken on top of the veggies. Bake at 400 for 20 minutes.
