Slice potatoes into 1/2-inch rounds and place on a prepared baking sheet or in the basket of an air fryer.

Bake in the air fryer at 400°F for 12 minutes.
While the potatoes are air frying, scramble two eggs with 1/4 cup of cottage cheese in a small nonstick sauté pan over medium heat. Move the eggs around gently, ensuring that they do not stick.
If using chicken apple sausage, cook according to package instructions.
Once the potatoes are finished cooking, build your breakfast bowl starting with arugula, then the potatoes, sausage, cottage cheese-egg scramble, and tomatoes. Top with feta and chili flakes. Enjoy!
