Ingredients
 

  • 2 Eggs, scrambled
  • 1/4 Cup Cottage cheese
  • 2 Sausage links, cooked and sliced
  • 3/4 Cup Alsum yellow potatoes, sliced
  • 2 Teaspoons Neutral oil
  • 1/4 Cup Cherry tomatoes, halved
  • 3/4 Cup Arugula
  • 1 Teaspoon Olive oil
  • 1 Tablespoon Feta cheese
  • 1 Teaspoon Chilli flakes

Instructions

  • Slice potatoes into 1/2-inch rounds and place on a prepared baking sheet or in the basket of an air fryer.
  • Coat in 2 teaspoons of oil and season with salt and pepper.
  • Bake in the air fryer at 400°F for 12 minutes.
  • While the potatoes are air frying, scramble two eggs with 1/4 cup of cottage cheese in a small nonstick sauté pan over medium heat. Move the eggs around gently, ensuring that they do not stick.
  • If using chicken apple sausage, cook according to package instructions.
  • Once the potatoes are finished cooking, build your breakfast bowl starting with arugula, then the potatoes, sausage, cottage cheese-egg scramble, and tomatoes. Top with feta and chili flakes. Enjoy!
