Farm Stand Breakfast Bowl
This hearty and wholesome breakfast bowl is the perfect way to start your day, offering a delicious balance of creamy, savory, and zesty flavors featuring yellow potatoes.

- 1 Air fryer
Ingredients
- 2 Eggs, scrambled
- 1/4 Cup Cottage cheese
- 2 Sausage links, cooked and sliced
- 3/4 Cup Alsum yellow potatoes, sliced
- 2 Teaspoons Neutral oil
- 1/4 Cup Cherry tomatoes, halved
- 3/4 Cup Arugula
- 1 Teaspoon Olive oil
- 1 Tablespoon Feta cheese
- 1 Teaspoon Chilli flakes
Instructions
- Slice potatoes into 1/2-inch rounds and place on a prepared baking sheet or in the basket of an air fryer.
- Coat in 2 teaspoons of oil and season with salt and pepper.
- Bake in the air fryer at 400°F for 12 minutes.
- While the potatoes are air frying, scramble two eggs with 1/4 cup of cottage cheese in a small nonstick sauté pan over medium heat. Move the eggs around gently, ensuring that they do not stick.
- If using chicken apple sausage, cook according to package instructions.
- Once the potatoes are finished cooking, build your breakfast bowl starting with arugula, then the potatoes, sausage, cottage cheese-egg scramble, and tomatoes. Top with feta and chili flakes. Enjoy!
