Yellows
When are yellow onions available? Wisconsin Yellow onions are harvested in September and available until May. Alsum offers yellow onions in prepack, medium to Jumbo sizes and work with onion partners for year-round availability.
Taste: Yellow onions have a full flavor that make them a good all-purpose, and most popular onion. Nutty, mellow, often sweet, quality when caramelized
Preferred uses: lightly cooked, sautéed or grilled
Reds
When are red onions available? Wisconsin Red onions are harvested in September and available in October thru January. Alsum offers red onions in medium to Jumbo sizes and work with onion partners for year-round availability.
Taste: mild to sweet flavor
Preferred uses: raw, grilled, roasted or char-broiled
Whites
When are white onions available? Alsum offers white onions in medium to Jumbo sizes with year-round availability.
Taste: Moderately pungent to very pungent, full flavored, finishes with a cleaner and crisper flavor than yellow or red onions
Preferred uses: raw, grilled, sautéed, or lightly cooked
Sweets
When are sweet onions available? Alsum offers sweet onions in medium to Jumbo sizes in spring and summer. Because of their higher water and sugar content, they bruise easily and need more care when storing. Don’t store them near potatoes.
Taste: Sweet and milder (and tear-free)
Preferred uses: raw, lightly cooked, grilled, or sautéed
