What do fingerling potatoes look like?
Fingerling varieties vary in color, but all are waxy, firm, flavorful and have a finger-like shape. Russian banana fingerlings have yellow skin and flesh. Purple Peruvians are, of course, purple skinned and fleshed. Ruby Crescents have a rosy skin and yellow flesh. French fingerlings have red skin and yellow flesh. Red Thumb fingerlings have red skin and flesh and Ozetteās have white skin and flesh.
