Fiesta Style Potato Tacos
Packed with all the goodies you usually find in tacos, this recipe takes russet potato skins to the next level.
Ingredients
- 6 Medium Alsum russet potatoes
- 2 Pounds Ground beef
- 1 Ounce Packet of taco seasoning
- 1 Cup Shredded Cheddar cheese
- Sour cream
- Shredded red cabbage or lettuce
- Diced chiles
- Diced tomato
- Cilantro chopped
- Jalapeno slices optional
Instructions
- Preheat oven to 350°F.
- Rinse and clean your potatoes, then bake for 60 minutes. (Cooking tip: To reduce cook time, microwave potatoes for about 12 minutes.)
- Once potatoes are done and tender, slice them in half lengthwise.
- Using a spoon, begin scooping out the insides of the potatoes until there is just a thin layer of the insides left.
- Cook the ground beef. Sprinkle your taco seasoning into the beef and mix well.
- Turn off heat and divide the beef mixture into the hollowed potato skins.
- Sprinkle with the shredded cheese and bake until cheese is melted.
- Place your skins on your serving tray and top with shredded lettuce or red cabbage, diced tomato and chiles, jalapeno (optional), and a dollop of sour cream. Top with cilantro.
