Honey-Dijon Roasted Creamers
Dijon mustard and honey adds a savory sweet twist to these roasted creamer gold potatoes.
Ingredients
- 24 Ounce Alsum gold creamer potatoes
- 2 Tablespoons Olive oil
- 1 Tablespoon Dijon mustard
- 1 Tablespoon Honey
- 1 Tablespoon Fresh Chives chopped
- 1 Teaspoon Salt as desired
- 1 Teaspoon Ground Black Pepper as desired
Instructions
- Preheat oven to 425°F.
- Wash creamers in cool water, then cut in half, pat dry and set aside.
- In a large mixing bowl, toss together olive oil, mustard, honey, salt and pepper. Add creamers to mixture and coat each potato well.
- Transfer potatoes to a 9 x 13 baking dish. Place in center of oven and bake potatoes uncovered 25 minutes or until easily pierced with a fork.
- Garnish with chopped chives. Serve immediately.
