Oven Roasted Horseradish Dijon Potatoes
These gluten-free crispy Oven Roasted Horseradish Dijon Red Potatoes are a tasty and convenient side dish. Made with just a few ingredients, you won't believe how delicious they are!
Ingredients
- 3 Pounds Alsum petite red potatoes washed and halved
- 3 Tablespoons Olive oil
- 3 Tablespoons Dijon mustard
- 2 Tablespoons Fresh grated horseradish packed + more for garnish
- 2 Tablespoons Fresh rosemary
- ¼ Teaspoon Garlic powder
- ¼ Teaspoon Salt
- ¼ Teaspoon Ground pepper
Instructions
- Preheat oven to 425°F.
- Place the petite red potatoes in a large mixing bowl.
- Add the olive oil, dijon mustard, fresh grated horseradish, fresh rosemary, garlic powder, sea salt, and ground pepper.
- Toss to thoroughly coat the potatoes in the mixture.
- Place the potatoes in a single layer on a large baking sheet.
- Bake for 45 minutes, or until the potatoes are golden brown, stirring once every 15 minutes. Serve immediately and garnish with more fresh grated horseradish.
