Taco Baked Potato
Elevate your traditional baked potato by topping it with taco meat, cheese, tortilla chips, avocado, and Pico de Gallo!
Ingredients
- 1 Alsum russet potato
- 4 Ounces Ground beef
- 1 Tablespoon Taco seasoning
- 1 Tablespoon Shredded cheddar cheese
- ¼ Cup Tortilla chips
- 1 Tablespoon Pico de Gallo
- 1 Ounce Avocado sliced
- 1 Teaspoon Sea salt
- 1 Teaspoon Olive oil
Instructions
- Heat oven to 450°F.
- Spray or rub potato in olive oil.
- Poke potato with a fork all over to help with equal cooking.
- Bake potato for 60 minutes.
- While the potato is baking, cook the ground beef in a pan with the taco seasoning for 10 minutes on medium heat.
- After 60 minutes pull the potato from the oven and let it cool for 5 minutes.
- After cooling, cut the potato lengthwise.
- Top the potato with the taco meat, Pico de Gallo, tortilla chips and avocado. Add salt to taste.
