  • 1 Alsum russet potato
  • 4 Ounces Ground beef
  • 1 Tablespoon Taco seasoning
  • 1 Tablespoon Shredded cheddar cheese
  • ¼ Cup Tortilla chips
  • 1 Tablespoon Pico de Gallo
  • 1 Ounce Avocado sliced
  • 1 Teaspoon Sea salt
  • 1 Teaspoon Olive oil


  • Heat oven to 450°F.
  • Spray or rub potato in olive oil.
  • Poke potato with a fork all over to help with equal cooking.
  • Bake potato for 60 minutes.
  • While the potato is baking, cook the ground beef in a pan with the taco seasoning for 10 minutes on medium heat.
  • After 60 minutes pull the potato from the oven and let it cool for 5 minutes.
  • After cooling, cut the potato lengthwise.
  • Top the potato with the taco meat, Pico de Gallo, tortilla chips and avocado. Add salt to taste.
