Taco Baked Potato

Taco Baked Potato
Ingredients
- 1 Each Russet potato
- 4 Ounces Ground beef
- 1 Tablespoon Taco Seasoning
- 1 Tablespoon Shredded cheddar cheese
- 1/4 Cup Tortilla chips
- 1 Tablespoon Pico de Gallo
- 1 Ounce avocado, sliced
- 1 Teaspoon Sea salt
- 1 Teaspoon Olive oil
Instructions
- Heat oven to 450 degrees Fahrenheit.
- Spray or rub potato in olive oil.
- Poke potato with a fork all over to help with equal cooking.
- Bake potato for 60 minutes
- While the potato is baking, cook the ground beef in a pan with the taco seasoning for 10 minutes on medium heat.
- After 60 minutes pull the potato from the oven and let it cool for 5 minutes.
- After cooling, cut the potato lengthwise.
- Top the potato with the taco meat, Pico de Gallo, tortilla chips and avocado.
- Salt to taste.
