Turmeric-Spiced Spud Sandwich
This hearty, whole-grain sandwich features layers of turmeric and black pepper-spiced potatoes, earthy roasted beets, crisp cucumbers, and fresh greens. Topped with creamy whipped goat cheese and vibrant pesto, it's a flavorful and nutrient-packed meal.
Ingredients
- 1 Medium Alsum russet potato
- 1 Tablespoon Mustard
- 1/2 Tablespoon Olive oil
- 1/4 Teaspoon Tumeric
- 1/4 Teaspoon Black Pepper
- 1/2 Cup Roasted beets, thinly sliced
- 1/2 Cup Spinach
- 1/2 English cucumber, thinly shaved
- 1/2 Tablespoon Goat cheese
- 1/2 Tablespoon Pesto
- 2 Slices whole grain bread, toasted
Instructions
- Using a knife or a mandolin, cut your potato lengthwise, 1/4 of an inch thick.
- In a small bowl, mix the oil, mustard, turmeric, and black pepper. Brush that mixture onto the potato planks, front and back. Put the seasoned potatoes on a piece of parchment that fits the basket of your air fryer in one even layer. Note: A regular oven and baking sheet can be used as well.
- Place in the air fryer for 15 minutes at 400°F (20-25 minutes if you want them crispier).
- While the potatoes are in the air fryer, slice your beets and cucumbers.
- Begin building your sandwich by spreading pesto on one slice of the bread and the whipped goat cheese on the other. Layer your roasted potatoes, beets, cucumbers, and lettuce on top of the slice with the goat cheese. Place the pesto slice on top.
- Cut in half and enjoy!
