Baked Jack-O-Lantern Potatoes
A simple yet festive side dish made with just 4 ingredients including yellow potatoes.
Ingredients
- 6 Alsum yellow potatoes small to medium sized
- 2 Tablespoons Olive oil
- 1 Teaspoon Kosher salt
- 1 Teaspoon Black pepper to taste
Instructions
- Preheat oven to 400°F and cover the baking pan with foil.
- Using a paring knife, carve a face into each potato (eyes, nose, and mouth).
- Toss potatoes with oil and sprinkle with salt and black pepper (to taste).
- Place them on the baking sheet face side up.
- Roast potatoes for 45 minutes or until tender.
- Serve with sauce or toppings of choice.
- Garnish with fresh rosemary.
