Ingredients
 

  • 1 Large Alsum russet potato
  • 1 Tablespoon Olive oil
  • ½ Teaspoon Paprika
  • ½ Teaspoon Garlic powder
  • 1 Teaspoon Rosemary chopped
  • Salt and pepper to taste
  • Olive oil spray
  • 1 Tablespoon Sriracha
  • 6 Ounces Greek yogurt

Instructions

  • Preheat oven to 425°F.
  • Peel the potato and use a spiralizer to create curly strings of potato.
  • Place in a bowl, add olive oil, salt, pepper, paprika, garlic powder and rosemary.
  • Toss the potato noodles until evenly coated.
  • Place on a lined or non-stick baking sheet and bake for 10 minutes.
  • After 10 minutes, stir the noodles to make sure they are not sticking. Place back in oven for 15 minutes.
  • Mix sriracha and Greek yogurt together in a bowl. Keep in the fridge until ready to serve.
  • Remove potato noodles from oven. Let cool and serve with the dip.
