The loaded twice-baked potato casserole is all of your favorite baked potato toppings in one easy to prepare dish. Baby red or gold potatoes taste best in this recipe!
Ingredients
- 2 Pounds Alsum baby red or gold potatoes baked, quartered, seasoned with salt & pepper
- 2 Cups Broccoli florets steamed
- 2 Cups Sharp cheddar shredded
- 1 Cup Sour cream
- 6 Slices Bacon cooked, crumbled
- Chives or scallions to top
Instructions
- Heat oven to 350°F.
- Butter a casserole dish, add potatoes, broccoli, cheese, sour cream, and top with bacon.
- Bake in a pre-heated oven for 25 minutes.
- Top with chives or scallions.
